Hey, hey, Friends! I just had to share this easy, delicious, and healthy dinner 🥘. I wanted to try something new, and the hubs had talked about a Pad Thai lunch he had last week. I’ve never had it and asked what kind of flavors are in it. A spicy , sweet & sour flavor profile began to fill my head. I began thinking about a dish I could make, inspired by this scrumptious-sounding meal. Along came the idea for a Chili Lime Peanut Chick’n (I’m a pescatarian but have healthy chicken subs ...this one is mushroom-based). I didn’t make measurements for the sauce but used peanut flour, water, lime juice, red curry paste, minced garlic, cumin, ginger, and cayenne pepper. The beauty about a sauce like this is 1) you know what’s in it and control ingredients and flavor, 2) you likely have items on hand to make it, and 3) it made this meal so incredibly flavorful and enjoyable. We will definitely be making this again! Added sides of Mukimame (soy beans), stir-fry veggies (red peppers, broccoli 🥦 , onions 🧅 , mushrooms , baby corn , carrots 🥕), wild rice , and a quinoa blend. Healthy 🥬, hearty, and mouth-watering 🤤 meals do not have to be complicated or expensive . I used frozen vegetables and a pre-made rice and quinoa mix (healthy ingredients only). I had the peanut flour on hand but could have easily used a simple peanut butter 🥜 as well. You could also use chicken if that fits your nutrition plan.
